2013

Week 1

Frozen Grapes

Week 2

Watermelon and Peach Slices dipped in Yogurt

Slice or chop your fresh fruit to the desired size and dip in yogurt.

We also had a surprise snack of dehydrated organic apples.

 

Week 3

Apple Cinnamon Granola

6 cups Oats (not quick oats)

1 cup shredded coconut

1/2 cup sunflower seeds (opt. up to 2c. nuts and seeds)

1tsp cinnamon

1/8 tsp cloves (opt.)

1/2 cup honey (opt. replace honey with mapple syrup)

1 1/2 cup chopped dried apples (used combined chopped dried fruit varieties up to 1 1/2 cups.)

Place a 9x13 pyrex baking pan on a large burner at medium low heat.  Stir the oats for 3-5 minutes until fragrant.  Add the coconut and seeds and cook an additional 2 minutes.  Stir in the honey, cinnamon and cloves and cook 2 more minutes.  Bake at 300*F for 20 minutes.  Stir in the dried apples.  Store in a sealed container in a cool dry space up to 6 weeks.

Frozen Bananas

Dehydrated Fruit

Bananas (sliced), Strawberries (sliced) and Pineapple (sliced and cut into pieces)

Set up a clean dehydrator, dehydrate the fruit according to recommendations by the dehydrator manual.

 

Week 5

Fruit Salsa

See 2012 Week 3

The Friut Salsa would also be good wrapped in a small tortilla spread with cream cheese.

 

Week 6

Cinnamon Sprinkled Apple Slices

Slice your apples, fuji apples last longer without browing, sprinkle with cinnamon and serve.  You can also dip your apples slices in plain yogurt mixed with cinnamon and ginger.

 

 

2012

Week 1

Frozen Grapes

Seedless Grapes (washed and removed from stems)

Place in serving sized bags and freeze 8-10 hours minimum.  Serve as a refreshing bite-size cold snack.

 

Week 2

Cinnamon Apple Slices

Apple

Cinnamon

Wash your apple, remove the core and then slice the apple.  Arrange on your plate and sprinkle with cinnamon.  If you are preparing this snack ahead the apple slices can be tossed in lemon juice about 2 tsp per apple to prevent browning.

 

Week 3

Fruit Salsa

2 kiwis peeled

2 Fuji apples

1 lb strawberries

chop and serve with cinnamon tortilla chips

Cinnamon Tortilla Chips

2 Whole Wheat Tortillas

spritz with olive oil

sprinkle with cinnamon

Bake at 350F for 5 - 7 minutes

 

Week 4

Frozen Bananas

Ripe Bananas (peeled and sliced)

Place in a snck sized zipper bag and freeze

 

Week 5

Cottage Sauce

Cottage cheese

Apple sauce

cinnamon

mix and serve

 

Week 6

Melon Salad

Dice equal amounts of Watermelon, Honey Dew Melon and Canteloupe Melon.  Toss together and serve.
